i'm not very good at baking cakes either. but i try to follow the directions on the box very carefully so that at least the cake comes out okay. you could try looking on the internet for tips on how to make a good cake.

P.S. as for the confectioner's sugar, i can't help you there. it's probably only sold in stores that specialize in baking goods.
