It is as though I'm on a temporary hiatus from it. I suddenly lost interest last Christmas season after decades of being a bookworm. I feel like the rest of life's responsibilities are so demanding that I don't have time to read for pleasure. I'm starting to feel the same about watching movies too. I get so impatient about the time I'm wasting sitting still.

Just find some time to go back to reading. Time is never wasted when reading a book.
Try to take some time to move a little more slowly. Get out of the city if you live there, and if you can't, try to take walks in the park or something. Find silence. Chew your food. Think and breathe with more leisure and precision; you'll find there's more substance in pondering.
Then when you're ready, read all of In Search of Lost Time by Proust. I haven't read it yet for the same reasons you're talking about, but I really want to. I think it'd be perfect for fixing these problems.
And, if you have no time, you might want to consider audio books. they're great for making use of time that's normally not used for books - like driving to work.
