If he is holding you hand to tight or constantly squeezing tell him that it kind of bothers you a little bit. But if its just like a pump or two then deal with it... either way they are both good signs.

About the handholding, maybe you should slip him the official "holding a 10 year old's hand" manual, and then he wont hurt your little fingers. Why dont you worry about things that matter, like observing his toilet seat habit's, and making sure he effectively pulls out, so you dont end up with a whiny 8 yr. old who complains to you that her boyfriend squeezes her hand too hard and it hurts her little fingers.

Those are common shows of affection where I'm from. Rubbing of the nose is called "Eskimo kisses" it's usually done by younger couples or family members like a mom and kid, the holding hands is perfectly normal. My husband and I hold hands like that all the time.
