Why can most people not differentiate between "your" and "you're"?

I just don't get how people can be intelligent, write full paragraphs with correct spelling, but most of them use "your" when they mean to say "you are". I mean, surely by the time you've reached your 20's, you would have seen such a common word being written correctly sufficient times to notice that "your" spelling it wrong and correct it?
Same thing applies when people say things like "Their going to go on a holiday", or "I hate to much food".
Am I the only one who this bothers?

I often have to resist the urge to correct people. It drives me insane!
most of them know the correct format I'm sure. The problem is that you're making too big a dea out of it. You should probably just relax. I know the correct grammatical structure for most things, but there is no use in bothering with it in casual conversation.
I agree 100% actually.
That has always bothered me and everyone who knows me knows it! haha. Maybe it's just my OCD tendencies and lack of interest in modern teen slang thats talking however.

Did you notice something? "So many people" - You ...make this mistake.

By the time they hit their twenties, they've probably learned it from others. It's also hard to break that habit, and it can resurface after having read lots of misspelled words

So, maybe the language is evolving.
Or I just realized my post could be misinterpreted.

I don't mean it to mean "you make this mistake, "

I put the - You as a method of quoting you. The ...make this mistake finishes the quote through paraphrasing.
