Do doctors only remove the vag if you have vaginal cancer?

You'd have problems if only your vagina was removed and your uterus and ovaries were left in place. How exactly would you menstruate if there was no exit for the sloughed-off uterine lining every month? A hysterectomy that removed only the uterus would solve this problem, and because your ovaries remained in place, the levels of your hormones should remain relatively stable. If your ovaries were removed as well as your vagina, cervix and uterus, then you'd most likely have to go on hormonal replacement treatment.
No ethical doctor would perform any of these drastic, irreversible, life-altering operations without first being certain that you were not doing it because you were mentally unbalanced, that you were capable of understanding all the likely and possible consequences, and that you fully accepted them.
If you've been firmly convinced for some time that this is something you must do for some reason, then I'd suggest your first step should be talking to your GP about how you can get it done. What you want is obviously very unusual, but they should have enough knowledge about your options to be able to point you in the right direction.
