Those tubes are secretly filled with feces from the Pillsbuury doughboy. When baked it gets a flaky crust.
Two thoughts that occurred to me is that either there's an ingredient you're allergic to - even just mildly - or the croissants are under-baked.
I've looked at the ingredients list, and they all seem normal for mass-produced, highly-processed breadstuffs. If you can eat other crappy, nil-fiber, white-flour, high-fat, bready snacks without any problems, I'd be surprised if Pilsbury's ingredients are the culprit.
Oven thermostats are notoriously inaccurate. You could try turning the temperature down a bit and leaving them in a little longer. Also, if you usually open the oven door several times to see how they're doing, that could be dropping the temperature enough that they aren't baking properly all the way through.
