Yes. My dad shot a black bear, took it to a guy, got a rug and lots of bear sausages with jalapenos.
Its decent, not much different than deer if you ever had deer. It's just denser taste wise if that makes sense.
My mother hates bear, not for the "typical" reasons. She hates any meat from animals with "hands" hooves are fine. Paws are not.

also you could make armadillo meat into sausage and itd be passable but eat the straight bear meat and its godawful
Never had armadillo, for some reason I think it tastes like turtle/crabs.

what im gettin at is that you can make any awful kindsa protien into sausage and make it edible given the over spiced garlciky flavor
and im not immune i fuckin love sausage

I'm willing to eat any meat as long as I'm not eating something's brain and it is prepared properly. Although I'm not a big fan of pork, just because of taste...

It's free. Also not uncommon depending on the area.
If someone hits a deer in my area and the insides weren't pulped (like if the deer broke its neck) that corpse would be gone the next day.
I dont understand smaller animals though. Big animals? Hell yeah! That's 100+ pounds of free meat.
As you can imagine this is more common during the winter.
I've had it once. It was in jerky form. I don't remember disliking it, but that was nearly 10 years ago at this point. One of my science teachers had brought it in as a class snack.

Bears being omnivores only really taste halfway decent if they’re in berry season. Gamey, depending on season it can be a bit sweet, but it tastes like old bad beef otherwise. They sell it at some stores here
