I had some family and friends over last night and I wanted to make my Italian chicken, but I was in a hurry and didn’t cook it to the recommended temperature.
Now they all have the runs! I feel so bad!
You apologize by eating a fully raw chicken at the next dinner you cook, then maybe you guys will be even.
You should feel bad. It's fine giving yourself food poisoning if you're too ignorant, disorganised or lazy to practice good kitchen hygiene, but someone like that should never prepare food for others, particularly since food poisoning can result in things far worse than diarrhoea.
Apologise profusely, admit that you made a mistake, and wait at least a couple of months before offering to cook for them again. When you do, make damn sure you do things correctly.
I had undercooked chicken at Kuala Lumpur airport in 1997, it gave me avian flu, vert i'll for 4 months.

Eating undercooked chicken or pork is bad news. Both have to be cooked thoroughly. Next time take the time to cook thoroughly. In the meantime, all you can is "I'm sorry. I messed up."
I just want to say that late last night/in the wee morning hours I made a monster sized Southwestern style Caesar salad with bacon, and grilled chicken as well as tortilla strips. I was so full I felt like I was gonna pop. I'm concerned for what my next bowel movement will be.

You talk about 'what your next bowel movement will be' as if it's going to come out as a boy or a girl...
Its really not a good idea to do things in a rush. If you know you won't have time either cancel the dinner date or cancel other obligations you have that day to have time for said dinner date.
