too much work
i pan sear the fuck outta a ribeye for a minute a side then grill to 130
meanshile i sautee onions on the sear pan with some red wine to deglaze all the charred stuff off the pan
You got me researching dry aging fridges out of curiosity (saw one for $250) Too bad beef is a rich man's delicacy where I live.
