Is it normal peoples' communication habits vary between text and talk?

It seems to me that people who text very few words tend to be LOOOONG winded in real life or over the phone. YET. people who pretty much write an encyclopedia with each text are almost dead quiet in real life or phone.

This ain't always the case. Sometimes there is balance but not usually. Well like once I dated this lady who wrote TONS on text or emails but then in real life chat, bitch NEVER shut up.
