Songs always like to bend the rules of language to make things "rhyme" or flow with the music. try not to think about it too much

Grammar rules often seem to be completely ignored in modern music.

"He don't" is possible, but it's improper English.. It's slang, so you can say it casually but it is incorrect. I'm not sure what you're asking about -ing.. You can use -ing with senses, it just depends how you want to use them.. it is a present participle but in some cases can be a gerund/noun or even part of an adjective.. What is your first language if you don't mind telling?

Some music genres tend to neglect grammar completely.

You can use 'ing' with the 5 senses when you are doing at that moment. Present time.
    "I'm FEELING sad right NOW."
    "I'm SMELLING something fruity."

I preffered to use he doesnt because there are people who says that he dont is grammatically wrong and when talking to someone he/she might see "he dont" as incorrect word to say. Maybe just consider the music caused writers must fit the lyrics to the sound and melody of the song they are creating.
