She finished the haircut then asked if it was okay if she took some photos. I said 'sure', but thought it would be rude to ask why.
Now I'm feeling paranoid. Do hairdressers often take photos of their haircuts?

I believe so, since I know people who are hairdressers and they have a portfolio of their work on Instagram, showcasing their best work.
While it's not a bad thing like others have mentioned she was likely happy about the work she delivered to the customer.
I really hope it was that. Neither of us speak much of the language of the country we're in so it was really quiet and I didn't get to know her very well (although I actually really appreciated the excuse to be still and quiet, and to have my hair touched). There was music on in the background and she snipped the scissors to the beat of the music and murmured a line here and there to herself. It was adorable.
I hope so. Hairdressers have sometimes said that cutting my hair is easy because it's very straight and dense, and I tend to neglect it rather than subject it to heat or chemicals (to the point of air-drying after washing, even in winter). And I don't have issues with sitting still. I like to hope that my hairdresser would have taken the pictures to use as teaching aids for her trainees...
Is this a joke? Do chefs take pictures of their food? Drug dealers even post pictures of drugs to sell on social media.
