Okay yes there is holes in OP story. As they don't explain how they see themselves sleep. However, you are wrong that every person's body turns off when they sleep. It's why we have various sleep disorders where people sleepwalking, thrash around and wake up often without sleeping all night. I personally have before kicked in my sleep during nightmares as well as during a severe allergic reaction started scratching in dream and woke up scratching. So yes its possible to do things in your sleep without realizing it.
