Sometimes when I focus on something really hard or I'm deep in thought I forget to breathe, to the point where I only notice when I begin to gasp for air. Is this normal?

I think you just mean you hold your breath a bit when you're really focused. Right?
Does it happen when you sleep, too? If so, it can be life threatening and you might want to have it checked out by a doctor.
This sounds a bit like a panic attack. I used to have them and it felt like I had completely breathed out and held my breath until I started to feel dizzy. I would then try to breathe at a normal rate but I would still feel dizzy until I went for a walk or something like that.
