Basil alfredo sauce: walnuts, chickpeas, nutritional yeast, basil, salt, pepper, non-dairy milk, garlic.
For basic Maranara I saute a large yellow onion or two in olive oil until softened. add a few cloves of chopped garlic until fragrant, deglaze with a cup or so of dry white wine. Add a few large cans of quality tomatoes (ideally San marzan), salt, a pinch of red pepper, and a teaspoon or so of fresh thyme. Simmer until desired thickness, breaking up the tomatoes as it cooks,a couple hours or so. I make this in vast quantities when canned tomatoes are on sale (or fresh in season) and freeze it by the quart. This is a base for many of more complicated sauces or great as is.
The best sauce I've ever had is so simple... lightly saute a lot of garlic in olive oil,,, add a ton of chopped fresh tomatoes,,simmer and stir for about 20 min until softened,,, puree, then add some salt, pepper, oregano and a splash of red wine vinegar,,simmer to perfection. YASSSS
I make bolognese with beef mince, onion, carrot, capsicum, diced tomatoes, paprika, cumin, turmeric, garlic and Italian herbs. I'd probably bastardise it further with broccoli if I was allowed. Served on 3 grain (buckwheat, amaranth and quinoa) fusilli.

Idk! I just put the canned stuff from the can to the pot, put in some (random) spices, and vòla! Sauce!
For the basic sauce, I make a blend of tomato sauce with chopped fresh tomatoes, fresh garlic, olive oil, onion, basil, oregano, paprika, salt, black pepper, maybe some parmesan, and white wine.
If I feel like making it a little more interesting, I'll add red bell pepper and/or red pepper flakes.
