Which is it better to start with in my specific case?

Whatever the case, I'm a freeancer so my schedule can be all over the place.

PT: I've done a couple of workouts with this person before over Zoom. I like the fact that they are non-binary AND not part of the hyperradical wokescold brigade (Yes, such a thing *is* possible!). I can discuss my circumstances with them in detail and feel kind of honest.
HOWEVER, the mere thought of having to do a food diary and/or weigh-in is really off-putting.
However again, I could have gym and/or home workouts as part of my plan. They either currently do or used to do workouts over Zoom but I can never tell whether I'm supposed to go to every single one or whether it doesn't matter.
Working out at home is currently not that much of an option due to how badly I need to unfuck my habitat (And I'm waiting to hear on whether I can join an anti-hoarding course)

Gym: I can access this 24/7, they have classes, they *also* have personal trainers but none are like the PT I'm considering. Again, I can never tell whether I'm supposed to go to every single one or whether it doesn't matter.
